DESCRIPTION:
The origin of Puebla cuisine is found in the convents and in the kitchens of the houses of the mestizos and creoles. It was in these temples of flavor, where the women of Puebla mixed native products of the region such as corn, chili, beans, tomatoes and turkey, with ingredients from overseas, such as olive oil, wheat, onion and garlic, among others; using various tools such as clay pots, metates and wooden spoons, different from those in the rest of the country.

The term mole (from Nahuatl molli or mulli) refers to various types of Mexican sauces made mainly from chilies and spices, and which are thickened with corn dough, with tortilla or to a lesser extent with bolillo, and also with dishes with meat and vegetables prepared with these sauces.
