In 2010, UNESCO (United Nations Educational, Scientific and Cultural Organization) recognized Mexican gastronomy as Intangible Cultural Heritage of Humanity, based on the culinary traditions of Michoacán. Calling it “The paradigm of Michoacán.”
This is because Michoacán still maintains the original crops and techniques in its cuisine, passed down from generation to generation since pre-Hispanic times, such as traditional chinampas, slashing and rotational cultivation of corn called milpa , the traditional nixtamalization of corn grains, or the use of traditional utensils such as metate, mortar or molcajete.
