DESCRIPTION:

The gastronomy of Hidalgo is very wide and rich. There is a great variety of dishes in the popular diet such as nopales with eggs, beans with epazote, chicken or ram mixiote; but the main one is Hidalgo caviar, escamoles (ant eggs), the stew of maguey worms is also an exquisite dish, although it is important to mention that these last two dishes are seasonal.
