Guanajuato's cuisine has characteristics shared by other entities in the Bajío; A clear example are the mining enchiladas, with variants (including the name) depending on the state in question, but the common denominator is their garnish of fried potatoes and carrots on one side of the dried chili enchiladas and a piece of fried chicken, complete.
